A Not-Just-For-Weekend-Brunch Classic



People tend to think of french toast as go-out-for-brunch fare. It is in fact very simple to make at home. Unlike pancakes, which need a just-so batter to cook up light and fluffy, their foreign cousin is sturdy and reliable.

The problem with french toast is that the bread, eggs and milk French toast requires can add up calorie-wise, so here is a reworked recipe for breakfast aficionados looking for a meal with less calories. A quick turn in the oven guarantees the whole batch will be done quick, and eliminating the fry pan brings the fat count down to 4.6 grams.

Baked French Toast

Prep & cook time: 20 minutes - makes 4 servings

Ingredients:

Instructions:

  1. In a shallow bowl, whisk to blend eggs, egg whites, milk, vanilla, sugar, cinnamon, and nutmeg.
  2. Lightly mist a 10 by 15 in. nonstick pan with cooking oil spray.
  3. Soak bread thoroughly on each side a few pieces at a time, in egg mixture.
  4. Place slices slightly apart in a single layer in baking pan.
  5. Bake in 500 degrees F oven until toast is golden on bottom, about 5 minutes. With a wide spatula, turn slices over and bake until other side is browned, about 3 to 4 minutes longer. Transfer hot French toast to plates.
  6. Sprinkle with sugar, drizzle with maple syrup, and serve with orange wedges, squeezing juice onto toast.
