La Baked French Toast

A Not-Just-For-Weekend-Brunch Classic

People tend to think of french toast as go-out-for-brunch fare. It is in fact very simple to make at home. Unlike pancakes, which need a just-so batter to cook up light and fluffy, their foreign cousin is sturdy and reliable.
Baked French Toast
Prep & cook time: 20 minutes - makes 4 servingsIngredients:
- 2 large eggs
- 2 large egg whites
- 1/4 cup nonfat milk
- 1 tsp. vanilla
- 2 tbsp. sugar/subsitute
- 1/2 ground cinnamon
- 1/4 tsp. ground nutmeg
- 8 slices sweet french or challah bread, about 1 in. thick
- powdered sugar or icing sugar/or none
- maple syrup/subsitute
- orange wedges.
- In a shallow bowl, whisk to blend eggs, egg whites, milk, vanilla, sugar, cinnamon, and nutmeg.
- Lightly mist a 10 by 15 in. nonstick pan with cooking oil spray.
- Soak bread thoroughly on each side a few pieces at a time, in egg mixture.
- Place slices slightly apart in a single layer in baking pan.
- Bake in 500 degrees F oven until toast is golden on bottom, about 5 minutes. With a wide spatula, turn slices over and bake until other side is browned, about 3 to 4 minutes longer. Transfer hot French toast to plates.
- Sprinkle with sugar, drizzle with maple syrup, and serve with orange wedges, squeezing juice onto toast.
