Waldorf, Cheese and Classic Coleslaw Recipes

Coleslaw is quick and easy to make, and a wonderful side for plenty of meals. Here are 3 different recipes that will satisfy any fan of slaw.

Apples, grapes, walnuts and a creamy dressing with a tangy splash of vinegar give this fresh coleslaw a sweet and sour flavor that will please any crowd. For a good salad, make sure you're getting the most moisture possible from your cabbage.

Waldorf Slaw

Prep. time: 20 minutes

Ready to serve in 35 minutes

Ingredients:



Instructions:

  1. In bowl combine all ingredients; cover.
  2. Refrigerate 15 minutes or up to 6 hours.
  3. Toss before serving.


Cheese Slaw

Serves 4

Instructions:

  1. Toss apples in lemon juice and mix with cheese, cabbage, carrot, raisins, walnuts and potatoes.
  2. Combine salad cream or fresh cream.
  3. Season to taste and mix into salad.


Classic Coleslaw

Makes 8 servings

Ingredients:

Instructions:

  1. In large bowl toss cabbage with 1 tsp.of the salt.
  2. In separate bowl, toss together carrots, onion and remaining salt.
  3. Let both stand for an hour.
  4. In colander, drain cabbage, by handfuls, squeeze-out excess moisture and return cabbage to bowl.
  5. Add undrained carrots and onion. Toss and combine.
  6. Whisk together vinegar, oil, sugar, mustard, and celery seeds.
  7. Toss with cabbage mixture and parsley.
  8. Cover and refrigerate for 1 hour.
Note: Classic Coleslaw can be refrigerated up to 3 days.

Thanks Michelle, I`m improving my health, so I make a lot o salads; have some other Waldorf salads to post later ... using iceberg lettuce.
