Waldorf, Cheese and Classic Coleslaw Recipes

Coleslaw is quick and easy to make, and a wonderful side for plenty of meals. Here are 3 different recipes that will satisfy any fan of slaw.
Apples, grapes, walnuts and a creamy dressing with a tangy splash of vinegar give this fresh coleslaw a sweet and sour flavor that will please any crowd. For a good salad, make sure you're getting the most moisture possible from your cabbage.
Prep. time: 20 minutes
Ready to serve in 35 minutes
Ingredients:
- 1/3 large head green cabbage, shredded
- 1 or 2 large red apples, cored and diced
- 3/4 cup red grapes, halved
- 3/4 cup chopped walnuts
- 1 large rib celery, diced diagonally
- 1/3 cup mayonnaise
- 1/4 cup plain yogurt
- 1 1/2 tbsp. vinegar, preferably apple cider
- 3/4 tsp. salt
- 1/8 tsp. course-grind pepper
- In bowl combine all ingredients; cover.
- Refrigerate 15 minutes or up to 6 hours.
- Toss before serving.
Cheese Slaw
Serves 4
- 2 red skinned eating apples, chopped
- 1 tsp.lemon juice, more if desired
- 6 oz. cheddar cheese
- 1 lb. white cabbage, shredded
- 1 large carrot, grated
- 2 oz. raisins
- 2 oz. walnuts, chopped
- 8 oz. cooked new potatoes, sliced
- 4 tbsp. Salad cream/dressing, or fresh cream
- Salt & pepper
- Toss apples in lemon juice and mix with cheese, cabbage, carrot, raisins, walnuts and potatoes.
- Combine salad cream or fresh cream.
- Season to taste and mix into salad.
Classic Coleslaw
Makes 8 servings
Ingredients:
- 8 cups cabbage,shredded
- 1 1/4 tsp.salt
- 3 cups carrots, grated
- Half red onion, thinly sliced
- 1/3 cup white vinegar
- 2 tbsp. vegetable oil
- 4 tsp. granulated sugar
- 1 tsp. dry mustard
- 1/2 tsp. celery seeds
- 1/4 cup fresh parsley, chopped
- In large bowl toss cabbage with 1 tsp.of the salt.
- In separate bowl, toss together carrots, onion and remaining salt.
- Let both stand for an hour.
- In colander, drain cabbage, by handfuls, squeeze-out excess moisture and return cabbage to bowl.
- Add undrained carrots and onion. Toss and combine.
- Whisk together vinegar, oil, sugar, mustard, and celery seeds.
- Toss with cabbage mixture and parsley.
- Cover and refrigerate for 1 hour.
