Dutch Apple Pancakes ForTwo

An excellent recipe for a RV road trip.

1 tbsp. butter, melted in non-stick frypan.

1 large apple, peeled and cut into slices.

Arrange apple slices in butter in pan, sprinkle with cinnamon and cover. Cook over low heat for about 5 minutes.

Batter:

1 egg, slightly beaten.

1/4 cup oil.

2 tbsp. sugar.

1/4 cup milk.

1 cup flour.

1 tsp. baking powder.

Method:

Pour over apples, cover and cook slowly. If you have an oven, brown the top under the grill before serving. However, batter will cook on the stove top if you don`t peek before 5 minutes are up (just like dumplings in a stew).

when dough is firm, remove from heat, cut into quarters and serve two pieces each, apple side up, sprinkled with a bit of brown sugar if desired. Serve with maple syrup, creame fraiche, yogurt - your choice.
