Crust For Custard Tarts, French Pastries

Quiche Lorraine - The Broken Pastry.

Quiche Lorraine is a simple yet rich pastry, perfect for the holiday season get togethers. It is also called broken pastry because of the way in which it is kneaded. It also serves as the bottom crust for fruit and custard tarts and foundation for many French pastries.

Here is the recipe:

Ingredients (serves 8):

500 g. all purpose Flour - 18 oz.

250 g. soften butter /or margarine - 9 0z.

10 ml. salt - 2 tsp.

125 ml. cold water - 1/2 cup

6 lean bacon slices - 6

180 grms. boiled ham or other ham - 6 oz.

3 eggs - 3

1 egg yolk -1

3 ml salt - 1/2 tsp.

pinch nutmeg - pinch

750 ml milk - 3 cups

180 grms. grated Swiss cheese /or - 6 oz. /or less.

Method:

Mix the flour with the butter and salt. Make a well in the center and pour in the water slowly, kneading constantly, until you get a smooth ball. Let the dough rest for at least 20 minutes. It is better if left overnight in the refrigerator. If the dough becomes to stiff, let it rest at room temperature for 20 minutes before rolling. Any excess amount may be wrapped in foil. It will keep in the refrigerator for a few days. Roll the dough out carefully and place it in a greased 20 cm. (8")pie dish with a fluted edge, It should extend a little beyond the edge. *Bake the pie shell in a 200 degree C (400 degree F) oven for 5 minutes. Blanch, chop and lightly fry the bacon and/or ham. Drain well and place on the bottom of the pie crust. Beat together the eggs, egg yolk, salt, nutmeg, and milk and pour the mixture over the meat. Sprinkle the cheese on top and bake the quiche in a 180degree C (350 degree F) oven for 35 minutes until the top is light brown.

Hint: If vegetables are added with the meat, make sure they too, are lightly fried.

Serve the quiche hot during this holiday season with your family and friends.
