Cheat`s Cheese Souffle

A short-cut way of a popular egg dish.
Calorie per souffle 570. Fat 27 g.
Ingredients:
3 medium white bread.
45 g. (1 1/2 oz.) mature cheddar cheese, grated.
1 medium egg.
6 tbsp. milk.
Pinch of dry mustard powder.
Salt and freshly ground black pepper.
- 1 large Ramekin dish, buttered.
- Round cutter.
- Set the oven to fairly hot. Gas Mark 6 otr 400 degrees F.
- Use the cutter to cut a round out of each slice of bread.
- Layer up the bread and cheese in the dish, finishing with a layer of cheese.
- Lightly beat together the egg, milk, mustard and seasoning.
- Pour over the bread and cheese -may have to do this in stages to allow the bread soak-up liquid.
- If nessessary, slide a knife down inside of dish and pour liquid in behind it, so that it reaches the base of the dish.
- Leave the dish to stand for 5-10min., until the bread is fully soaked.
- Stand ramekin on a baking try and bake in the center for 25-30 minutes, until it is well risen, golden and feels firm when lightly pressed.
