Potato Rosti – Egg dish for supper and Hash Brown Rosti

Potato and Carrot Oven-baked Rosti – Egg dish for supper.
Ingredients:
2 large potatoes, scrubbed.
2 large carrots, peeled.
2 small onions, sliced and chopped.
1 tbsp. olive oil or other oil.
Pinch of ground coriander.
Salt and pepper.
Method:
Set the oven to fairly hot, 400 degrees F.
Put the potato, whole, in a pot and cover with water.
Bring to boil and simmer for 5 min.
Drain and rinse the potatoes in cold water to cool.
Coarsely grate potato and carrots in a bowl, stir in onions, olive oil, coriander and seasoning.
Transfer the mixture to a greased ovenproof dish, hollowing the center slightly.
Place the dish on a baking tray and bake in the center of the oven for 20-25 min., until the vegetables start of brown.
Remove from the oven and crack eggs into the hollow.
Season top of eggs with salt and pepper.
Return to the oven for a further 5-8 min., until the eggs is cooked to your taste.
Remove from the oven and eat while hot.
Thyme Rosti (Grated) Potatoes
Large recipe. 8 servings. Per serving 231 calories.
Your time in the kitchen is: 15 minutes, ready in 25 minutes.
Ingredients:
8 tbsp. or less, butter or margarine.
2 pkgs. (1 lb. 4 oz. each) Frozen (Thawed - Refrigerated) shredded Hash brown potatoes, divided.
1 tbsp. dried Thyme herb, divided.
1¼ tsp. Salt, divided.
½ tsp. pepper, divided.
Method:
Position oven rack 2”-4” from heat source; preheat broiler.
In ovenproof skillet over medium-high heat, swirl 2 tbsp. butter over skillet bottom and sides.
Add 1/3 of potatoes; sprinkle with 1/3 thyme, salt and pepper.
Flatten potatoes with spatula; drizzle with 2 tbsp. butter.
Top with 1/3 potatoes; flatten with spatula and sprinkle with more thyme, salt and pepper.
Drizzle with 2 tbsp. butter; sprinkle with remaining potatoes; sprinkle with thyme, salt and pepper.
Drizzle with remaining butter.
Cover; cook until browned around edges; about 6 minutes.
Uncover; put on broiler. Broil until top of potatoes are crispy, 3-4 min.
Invert platter or large plate over skillet;
Invert and remove skillet.
