Have you been looking for that well talked about Diet soup? Well, I was digging through my files and I found it! It is a great way to use the autumn harvest vegetables, to boot.

 A little information on carbohydrates:

You fight fat 2 ways: while the typical low-fat diet might weigh-in at 200-300 carb grams per day, this one has a mere 35-45. Why so low? Pros explain that restricting carbs is a hot trend because it really works. In fact, not one, but two recent studies published to the new England Journal of Medicine report that folks following a low-carb for sic months lost two to three times more weight than low-fat dieters. The explanation: first, low-carb plans force your body to use stored fat for functions ordinarily fueled by carbs. Second, controlling reduces levels of the fat-storage hormone insulin – and that prevents the formation of new flab. Notes Dr. Eades: “Most soup diets are low in calories, but this one has the added advantage of carb control. All else being equal, the fewer carbs you consume, the more weight you`ll lose.”

Protein Power Diet Soup Recipe – Large amount & filling.

Ingredients:

3 tbsp. olive oil.

3 cloves garlic.

1 ½ onions.

3 cups each zucchini and yellow squash., sliced, or 3 cups mixed frozen vegetables.

3 cups diced cooked chicken, drained /or 3 cans (5-oz. each) chicken, drained.

2 cans (14 ½ oz.) diced tomatoes.

3 cans each seasoned chicken broth.

6 cups fresh baby spinach or 3 cups frozen chopped spinach thawed and squeezed dry.

Method:

  1. In a large saucepan over medium heat, add oil, garlic and onions; cook onions until transparent and beginning to become golden. Raise heat to medium high, add remaining vegetables except spinach and cook until just tender.
  2. Add chicken, tomatoes and broth; bring to a boil. Reduce heat and simmer 10 minues. Add spinach and cook until just wilted.


269 cals. 25 g. protein. 14 g. fat (3 g. saturated) 62 mg. chol. 11 g. carbs. 1,498 mg. sodium. 5 g. fiber. 2 g. sugar.

Yes, it is good. I only make only half though ... and I have (at times) added beans I soaked, but it is changing it to a non-diet soup ... also good.

Thank you for this Jessie. I'm going to try this more to have soup available for lunches and then to see if I can more readily reduce my caloric intake. I personally like soup very much anyway, love squashes and spinach. This one sounds great to me.
