Grandma Put Oatmeal in Everything!

Well, my old Granny Haggan put oatmeal in a lot of her cooking, not quite all of the cooking.  I guess we ate a fair amount of meat loaves. I liked them. Her meat loaf was made of beef hamburger, and not the lean kind. I think it had about one cup of oatmeal in it, soaked in a small amount of milk. The meat loaf was topped with strips of bacon. As a girl I did not know why she put meat with meat. Mom didn`t do that.  I understand as an adult that it must have been for flavor. She did drain the pan.

I put oatmeal in a fair amount of my cooking, and not just the cookies. But I have two ways of making the meat loaf. I use the oatmeal with lean burger, but I also use mashed lentils. If I happen to have lentils cooked, from making my homemade soups, I save a cupful; I know I will be making a loaf in the next few days. I will sometimes grate a carrot or finely chopped celery (or both) into the loaf, like Mom used to do.

On occasion, maybe when I know someone is dropping by for supper; I will put mashed creamed potatoes a top, browned slightly. Another topping is the bread crumbs, and maybe grated cheese, maybe both. Dolled-up or plain, I love meat loaf.

A little British story:

Mother knows best.

When a friend’s newly married daughter cooked ham, she cut both ends off before putting it in the pan.

 “Why did you do that?" Her husband asked her. “Because my mother always did it,“ she replied.

When her husband asked his mother-in-law why, she said she didn’t know – she`d copied her mother.

So he finally questioned his wife`s grandmother. It’s simple, “she said I always used to trim the ends because my baking tray was too small.”

Good Meat loaf recipe.

Mix all together in a medium bowl.

About 1 lb. lean beef hamburger (later, drain if necessary).

½ - 1 can tomato soup.

1 beaten egg.

1 cup quick oatmeal soaked in some milk to make a loose paste /or large bread crumbs moistened with milk.

1 tbs. soy sauce.

Pepper to taste.

¼ finely chopped onion.

- Mixture should be firm, not too wet.

Set mixture into a glass or tin loaf pan.

Cover with foil.

Bake at 350 degrees F. for ¾ of an hour.

Not only is this wise nutrition, it spreads the food out, economically speaking. It also captures the oil and fat, preserving good tastes. My mother did this too. A Wisconsin approach to meat loaf.

I've tried this recipe and it's very good. Whenever I make meatloaf I serve it with mashed potatoes, corn and cucumber salad, because that's how my mother would serve it. Nice article Jessie.
