Gourmet Muffins – 2 recipes

Cranberry Streusel Muffins

Don`t have the time to bake a cake. Muffins are easier, and these two recipes are like cake. A Cinnamon-brown sugar streusel creates a crunchy topping for these muffins made doublydelicious with cranberries.

Streusel:

Preheat oven 350 degrees F. and grease muffin tin.

1/3 cup packed light brown sugar.                                                                                                                        2 tbsp. white flour.                                                                                                                                                                                                                                                                                                                                                                         ½ tsp. ground cinnamon.                                                                                                                                                        1 tbsp.melted butter or margarine.                                                                                                                          

Muffin batter:

1 ¾ cups all-purpose flour.                                                                                                                                                                                                                               3/4 tsp. baking powder.                                                                                                                                                           ½ tsp. baking soda.                                                                                                                                                                                                                                 ½ tsp.salt.                                                                                                                                                                                                          3 eggs.
                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                      3/4 cup white sugar.                                                                                                                                                                               ½ cup sour cream.

½ cup whole-berry cranberry sauce.

½ cup sweetened dried cranberries.                                                                                                                     ¼ cup butter,  melted.                                                                                                                                                         1 tsp. grated lemon zest.

Directions:

  1.  In a large bowl, combine flour, baking powder, soda, & salt.                                      
  2. In a larger separate bowl whisk together eggs, sugar, sour cream, cranberry sauce, cranberries, butter and lemon zest until blended.    
  3. Stir in                                                                                                                                                                                                                                                                                      flour mixture.           
  4. Divide                                                                                                                                                                                                                                                                                                                                                                                                                            among muffin cups.   
  5. Using fingers, press streusel mixture together to form crumbs; dividing evenly, sprinkle over muffin batter.   
  6. Bake 18 to 20  mintues                                                                                                                                                                                                                                                                                                                                                                                                                or until toothpick inserted in the center comes-out clean;                                                                                                         Cool for 10 minutes.                                                                                                                                                                                                                Transfer from pan to racks; serve warm or at room temperature with, if desired, butter.    

A quicker muffin:

Coffee Cake Muffins

1 ½ cups flour.                                                                                                                                                                                                                                                                                                                                                      2 tsp. baking powder.                                                                                                                                                                                                                                                                                                                                                                                                                                                                  ½ tsp. salt.                                                                                                                                                                                                                                                                                                                      ¼ cup butter or margarine.                                                                                                                                                                  ½ cup sugar.

1 egg.                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                            ¾ cup milk.                                                                                                                                                                                              ½ tsp. vanilla.

Spice mix:

½ cup brown sugar.                                                                                                                                                                         2 tbsp. flour.                                                                                                                                                                                                                                                           1 tsp. Cinnamon.

Mix and fill muffin tins 1/3 full. Sprinkle spice mix over.  Fill remaining batter 2/3 full. Bake 400 degrees F. for 20 to 25 minutes.

Great job. Good for the soul. This is truly comfort comfort food, Butter melted in the micro.
