Refreshing Tuna Salads

Lite salads with tuna meat are great for winter days.
Good portion.
Malibu Tuna Salad:
4 oranges, peeled and cut cross section.
10 cups spinach leaves, washed and coarsely torn.
1 Spanish onion, very thinly sliced.
1 large avocado, peeled and thinly sliced.
2 – 7 oz. cans solid white tuna fish, drained and broken into large chucks.
Mix and toss in;
¼ - ½ cup sugar.
½ - 1 tsp. salt.
1 tsp. dry mustard, or less.
½ tsp. grated lemon peel.
2 tsp. onion, finely minced, (optional).
1/3 cup lemon juice, freshly squeezed.
¾ cups of salad oil.
1 tbsp. poppy seeds, (optional) or other topping.
Tuna Waldorf Salad:
Makes 4 servings.
1 – 7 oz. can of solid white tuna fish, drained and separated into large flakes.
¼ cup mayonnaise
1 cup of diced (skin on) apple, mix with a little lemon juice to keep white.
½ cup minced celery.
¼ cup chopped walnuts.
½ cup raisins.
1 tbsp. sesame seeds (optional).
Method:
Make a French dressing:
with 3 tbsp. oil,
2 tbsp. vinegar,
¼ tsp. salt, freshly ground pepper
and ½ tsp. sugar.
Blend well, toss several large lettuce leaves in dressing and line salad bowl.
Add to the mayonnaise and diced apple, celery, walnuts, raisins and (sesame seeds).
Carefully add tuna flakes.
Place in lettuce leaves and chill for one hour before serving.
