Valentines Delicious Chocolate Cake

Method:

  1. Preheat oven to 350 degrees F.
  2. Prepare 2 -  9” layer cake pans by placing a circle of wax paper on the bottoms. (This is because the cake is very fluffy).
  3. Sift dry ingredients together in a large mixing bowl and add mayo. , water, and vanilla.
  4. Blend with a wooden spoon until smooth.
  5. Beat 2 minutes by hand or 45 seconds by using an electric mixer at medium speed.
  6. Pour mixture carefully into pans.
  7. Place in the middle of oven and bake for approx. 25 to 30 minutes, until cake starts to pull away from the sides of the pans and center of cake feels spongy to the touch of your finger.
  8. Remove from oven.
  9. Cool cake in pans for at least 5 minutes, before turning onto cooling rack.
  10. Carefully remove wax paper and allow cake to cool completely.
  11. Mix warmed jam with rum or brandy and sandwich layer of cake together with mixture. Work carefully in order not to break the cake.
  12. Spread fresh whipped cream on top of cake and sprinkle with the nuts.
  13. Let cake stand 1 hour before serving.
Store in the refrigerator.

Serving suggestion:  Serve each slice with a dusting of cocoa powder, and with some preserved or candied ginger, valentines ‘candies, or …

Ginger and mayonnaise in a chocolate cake, that's amazing, Jessie. Your cake sounds totally delicious, I'm going to try and make it!

I had a recipe for Austrain chocolate cake, that has the layer filling of warmed apricot jam with bandy mixed. I had the recipe for Manyonnaise cake ... so I combined the two.

I plan to take a few pictures of my cakes, next time I bake them. "Thanks."
