Make your own casserole – basic method.

The great thing about making a casserole is that you can use`handfuls`and you can clean-up the Frig. You can get very creative. Both recipes are made with canned soup ... but if you happen to have corn chowder or your own potato soup that works, too.

Casserole:

Servings  - 4.

1 can cream of celery, chicken, or mushroom soup.

½ cup milk or water or liquid from vegetables.

1 to 1½ cups cooked or canned meat, fish, or poultry (diced).

2 cups cooked vegetables.

2 cups cooked noodles, pasta, rice, or potatoes (diced).

Seasonings of choice.

2 tbsp. buttered bread crumbs, slightly crushed corn flakes, crackers, or herb seasoned stuffing mix, or croutons, or/what have you.

Method:

In a 1½ quart casserole, blend soup and milk.

Stir in meat, noodles, or other, and vegetables, and spices.

Top with crumbs.

Bake at 350 degrees F. oven for 30 minutes.

Directions:

  1. Preheat the oven to 350°F. Coat a 13" x 9" baking dish with cooking spray.
  2. Place the broccoli and water in a large resalable plastic storage bag. Microwave on high power, rotating occasionally, for 3 to 5 minutes, or until bright green. Drain and set aside.
  3. In a small bowl, mix the soup, mayonnaise, lemon juice, curry powder, salt, and pepper. Stir to mix. Line the prepared baking dish with the reserved broccoli. Top with the chicken. Cover evenly with the soup mixture. Sprinkle with the cheese. Cover and bake for about 25 minutes. Uncover and bake for 15 to 20 minutes longer, or until golden and bubbling.
