Harvey Wallbanger cake
Ingredients:
- 1 pkg. yellow cake mix.
- 1 pkg. vanilla instant pudding.
- ½ cup cooking oil.
- 4 eggs.
- ¼ cup vodka.
- ¼ cup Galliano liquor.
- ¾ cup orange juice.
- Mix all cake ingredients together and beat for 4 minutes.
- Pour batter into a well-greased and lightly floured Bundt pan.
- Bake at 350 degrees F. for 45 to 50 minutes.
- Dust with confectionery sugar /or frost with Orange glaze.
- 1/3 cup butter or margarine.
- 2 cups confectioners` icing sugar.
- ½ tsp. grated orange rind.
- 1½ tsp. orange juice.
- 2 -4 tbsp. additional orange juice.
- Melt butter in saucepan.
- Add orange rind.
- Blend in sugar and 1½ tsp. of the orange juice.
- Stir-in additional orange juice, 1 tbsp. at a time; until glaze is the proper consistency.
- Spread on warm cake and let it drizzle down the sides.
Confectioners' Chocolate Sauce:
Makes 2½ cups.
- ½ cup butter.
- 2¼ cups sifted confectioners 'sugar.
- 6 squares (1 oz. each) unsweetened chocolate.
- 1 small can evaporated milk (2/3 cup).
- Melt butter in top double boiler, or small pan inside a pot/pan simmering water.
- Stir in c. sugar, chocolate and evaporated milk.
- Cook for 30 minutes without stirring.
- Remove from heat; beat until well blended.
- Use right away, or store in refrigerator when cooled.
This is a moist and delicious cake.
